Fragrant and tangy, Yucatecan cuisine delights the palate with flavors unique to the region. The distinct regional cuisine of Yucatan state incorporates many of the ingredients traditionally used in Mayan cooking including corn, chocolate, wild turkey, squash, chiles and tomatoes, with European ingredients such as pork and oranges from the Spanish and Edam cheese from the Dutch. Yucatecan cuisine differs from traditional Mexican cuisine in part due to the Yucatan region’s geographic isolation from other parts of Mexico and its European, Caribbean, Middle Eastern and indigenous influences. Many of the delectable dishes that you’ll find on the menus at restaurants in the Yucatan Peninsula are not traditionally prepared in other parts of the country.

Two seasonings that are frequently used in Mayan cooking include achiote (sauce made from ground annatto seeds) and pipian (sauce made from ground pumpkin or squash seeds). Regional dishes such as cochinita pibil (roasted suckling pig) and pollo pibil (chicken) are prepared by marinating the meats in achiote sauce, and papadzules (tacos filled with hard boiled eggs) are served with pipian sauce. Other traditional Yucatecan dishes that you’ll find include: sopa de lima (chicken and tortilla soup with lime), poc chuc (pork marinated in sour orange juice), pollo ticuleño (chicken baked in banana leaves), pavo en relleno negro (turkey in a black chile paste), pavo en escabeche (spice rubbed turkey with cloves and black peppercorn), pork trancas (pulled pork sandwiches), and panuchos and salbutes (fried tortillas with cochinita).  Deer, armadillo, and caiman meats are also found in the region. / visitmexico.com

Tulum Restaurants
In Tulum, the cuisine is based on fish and seafood, freshly caught in the Caribbean Ocean. These marine dishes are prepared with Mayan ingredients and techniques, giving them a unique flavor. What’s more, this place is going through a culinary boom thanks to renowned chefs who reinterpret regional dishes with a gourmet touch.

By necessity, Hartwood considers sustainability first and foremost in all their work and in every decision at the restaurant.  Solar panels power the lights and music and every other little thing that keeps the restaurant running. They have broken down their waste with zero carbon footprints, creating 100% organic compost that is used in regenerating the mangrove environment and interior farming. All cooking is done by open fire within their hand made wood burning over and grill. Every ingredient that they use is deeply rooted within Mundo Maya. All fish are properly hunted and spear caught within the Caribbean and the Lagoons of Boca Paila. Hartwood harvests colorful, exotic produce from communal Mayan farms called milpas where they work with the Maya community in all aspects of their education of organic polifarming. Hartwood’s menu changes daily based on the sea and land that offers new harvest each day.

Kitchen Table is a restaurant located on the jungle side of the beach road at the Tulum National Park. Built using only reused and natural materials native from the region and designed to have minimal ecological impact. The energy that the restaurant uses is produced by solar panels.  A wooden grill, a bar and ice boxes full of local fresh produce are the only ingredients Kitchen Table needs to create delicious food and cocktails.
